Cats are easier, you just swap their litter out for something non-absorbent and then suck it up with a syringe. Although we also have had a vet assistant squeeze the pee out of the cat once when the vet needed a sample. That was funny. Well funny for us, I'm pretty sure Milo was horrified.
Try a cardboard tray like they use for french fries. Walk the dog on a leash and slid tray into place once dog begins to void. The tray has a lot more room for error than a specimen cup.

We've had to do lots of things for dog well-being, but I'm glad I haven't had to do that. So far, anyway.
