Crawfish season is upon us, so it's time to sidle down to a boil and pick up a bag of spicy cajun crawdads. I prefer to pick up a couple pounds, a newspaper to spread them on, and a gallon of sweet milk to douse the fire in my mouth from time to time.

I really like Gumbo or Étouffée, but corn on the cob is the bomb
I think a true Cajun would mark everything but milk...maybe a little sausage thrown in there, too.

I must admit... I do not like crawfish...
As Mark said, being of Cajun decent, I need a choice for all of the above, but milk. Add lemons, onions, and sausage. Take some of the boiled potatoes and make a nice Cajun potatoes salad to go with it. Oh, and for the best spice and flavor, don't forget to suck the heads.

I feel sorry for the people who don't like crawfish or have never tried them. They are ooooo so yummy!!!
oh, don't worry AL... I like so many other foods that I don't think I am missing out due to my not liking crawfish.... besides, it leaves more for those who do like them... 8-)
I'm not cajun, but I know enough that the best flavor comes breaking off the heads and sucking out the skulls.
